This past weekend was my husband and my first wedding anniversary, and we took a road trip to Asheville to celebrate (stay tuned in this post for some delicious healthy snacks for the road)! We got married on August 10, 2013 at the Red Barn at Hampshire College in Massachusetts in front of 118 of our closest family and friends. It was such a magical and fun day, filled with so much love.

We left Maddie (our French Bulldog pup) with my parents, and hit the road for Asheville for the weekend to celebrate. I’m a crazy planner. I can’t just pick up and go some place without spending lots of time researching first! My biggest priority when traveling is always food. What am I going to eat when I get there? What about on the way there? Spending some time doing detective work to find organic + gluten free options is always a challenge, but I do my best (:

Here are some highlights from out trip! We stopped for lunch at this place called HomeGrown. Shawn got a grass-fed cheeseburger and I got Asian chicken salad on top of their Farmer’s Salad. Both meals were awesome! We planned to go on a hike to see some beautiful waterfalls afterwards, but the weather forecast was questionable and I didn’t want to be in the middle of the woods in a downpour, so we headed into downtown to do the self-guided Urban Trail tour. It was a great way to see a lot of the city, and learn a little about the history too.

Later, we got drinks at  few of the bars downtown. One of my favorites was at this really cute indoor/outdoor bar at Aloft hotel called w xyz bar, and another place that I loved the rustic décor (you saw my wedding pictures!) called Rhubarb.

Our dinner reservation was at Posana. It’s 100% gluten-free (woah!!!) and farm-to-table with all food being local and made in-house from scratch. I’d move into this place if I could! For an appetizer, we got their lobster mac and cheese, made with ricotta gnocchi, Maine lobster, chives, and delicious aged cheddar cheese. It was incredible. We both got the same meal for an entrée – ate it too fast to take a picture! It was the braised beef short rib with horseradish whipped potatoes, and romano beans.

The next morning we went to Early Girl Eatery for a huge breakfast! Shawn got an omelet and hash browns, and I got their Local Sausage and Sweet Potato Scramble, which was eggs scrambled with local pork sausage, shiitake mushrooms, sweet potatoes, tomatoes, green peppers, and green onions. It was a fabulous meal and I was full until around 3pm 🙂

It was a fun trip and a great anniversary celebration!

Next time you head out for a road trip, here are some healthy snacks you can pack to take with you:

  • Trail mix (organic nuts, seeds, raisins/dried fruit)
  • Vegetable sticks (carrots, bell peppers, celery, cucumber, jicama, etc)
  • Dip – if you’re not driving – for your vegetable sticks (guacamole, hummus, almond or sunflower butter, salsa)
  • Larabars or homemade granola bars
  • Protein shake
  • Hard boiled eggs
  • Organic popcorn
  • Granola
  • Fresh fruit (apple, banana, pear, etc)
  • Kale chips
  • Raw Chocolate Brownie Bites
  • Yogurt
  • Chia pudding
  • Pre-packaged snacks. Some of my favorites are Macrogreens bars, Green Superfood Bars, Active Greens Bars, NuGo Organic Bars, Spirulina Energy Bars, Lara Bars, toasted coconut chips, granola, plantain chips, and a favorite of my husband’s: beef jerky
     
    Staying hydrated is also important…just not too hydrated 🙂 I brought with me a Synergy Enlightened Chia Kombucha drink, and Shawn had a KeVita Sparkling Probiotic drink for the road, sooo good! Either grab a fancier drink like one of these, or just a water. As always, stay away from the sugary sodas and energy drinks.
