banana chia pudding

 

I love chia seeds. They’re one of my favorite superfoods!

Check out these stats: they are loaded with antioxidants (fight the production of free radicals which can damage molecules in cells and contribute to ageing and diseases like cancer), they are high in protein and fiber (aids weight loss by reducing appetite), they are high in omega-3 fatty acids (help control ‘bad cholesterol’ levels and fight inflammation),  and SO much more! They are among the healthiest foods on the planet and are loaded with nutrients that have important benefits for your body and your brain.

So now that you are loving chia seeds as much as I do, it’s time to find ways to incorporate them into more areas of our lives, right?  Well the good news is, you can add them to pretty much anything, and not realize they’re there. They can be mixed with water and form a gel, which works as an egg replacer, they can be sprinkled on your oatmeal, cereal, or yogurt, added to your shakes, etc. but my favorite way to have them is in pudding. Who doesn’t love pudding? 

I first had a Chia Pod made by The Chia Co a few weeks ago, and thought it was super delicious, but pricey. I knew there had to be a cheaper way to make them, but still taste really good. 

Here’s the recipe I came up with for a banana version. Feel free to play around with these ingredients to come up with new variations!

Chia Banana Pudding
Gluten free, dairy free, soy free, vegetarian, vegan, paleo

Ingredients
  1. 1 ripe banana
  2. 1 cup coconut or almond milk
  3. 3 tbsp chia seeds
  4. 1 teaspoon raw honey
  5. 1/8 tsp cinnamon
  6. Shredded coconut (optional topping idea)
  7. Mini Enjoy Life brand chocolate chips (optional topping idea)
Instructions
  1. Add all ingredients (except toppings) to a food processor or blender and process until well combined.
  2. Pour into a jar, and let sit overnight to set.
  3. Add your toppings and enjoy!
Notes
  1. Makes a great breakfast, snack, or dessert!
