I’m SO glad you enjoyed my healthy, superfood-packed homemade granola bar! It was made with organic ingredients and was designed with a nutritional profile to keep your blood sugar stabilized and give you energy & nutrients to stay healthy.

Ingredients
  1. 3/4 cup almonds, chopped (by hand)
  2. 2 tablespoons pumpkin seeds
  3. 2 tablespoons sunflower seeds
  4. 2 tablespoons ground flaxseeds or chia seeds
  5. 3 tablespoons unsweetened coconut flakes
  6. 3/4 cup gluten-free oats
  7. 1/4 teaspoon sea salt
  8. 3 tablespoons raisins
  9. 1/4 teaspoon cinnamon
  10. 1/4 cup Sunbutter or almond butter
  11. 4 tablespoons raw local honey
  12. 1/4 cup unrefined coconut oil
Instructions
  1. Line a 8x8 or 9x9 baking dish with parchment paper, and preheat the oven to 350F.
  2. In a large mixing bowl, add the first 9 ingredients and stir to combine well. Heat up the Sunbutter, honey, and coconut oil either over the stove or in the microwave until soft/melted. Drizzle over dry ingredients, and mix well so the sticky mixture coats all of the dry ingredients (it's messy, but I used my hands to make sure it coated it well!)
  3. Pour the mixture into the baking dish to cover the whole bottom evenly. Use the bottom of a large glass or mason jar covered in parchment paper to press it down extra firmly. This will help the bars stay together.
  4. Bake for 12 minutes or until lightly brown on top. Let cool completely, then refrigerate. Do not cut into bars until after they've cooled in the refrigerator for an hour.
  5. Store in airtight container in the fridge.
