With Memorial Day coming up, it’s time to pull out the red, white and blue to show our gratitude for all those who have served and given their lives for our freedom.
This raw, vegan (aka NO baking required, my favorite type of dessert) patriotic fruit pizza looks so festive, and will make the perfect addition to your Memorial Day BBQ celebration…or just to make and enjoy on a hot summer day since its best served nice and cold! It’s loaded with nutrient-dense ingredients, but you’d never know by eating it.
This healthified version of a traditional fruit pizza is made with a few simple whole food ingredients like walnuts, dates, coconut, a touch of maple syrup, and berries. Even if you’re not confident in the kitchen, it’s hard to mess it up 🙂
It starts with a crust that’s like a big chewy cookie, then it’s filled with a thick frosting ‘sauce’ made with canned coconut milk, and topped with your favorite seasonal fruits like raspberries, blueberries, kiwi, dragon fruit, grapes, and blackberries.

- CRUST===
- 1 cup dried unsweetened shredded coconut
- 1 cup raw walnuts
- 6 Medjool dates, pits removed
- 1/4 teaspoon sea salt
- 1 tablespoon coconut oil, melted
- 1/2 teaspoon vanilla extract
- SAUCE===
- 1 can full fat coconut milk
- 1-2 tablespoons pure maple syrup or local honey
- 1/2 teaspoon vanilla extract
- TOPPINGS===
- Your favorite fruit, bite-sized pieces
- Add all crust ingredients to a food processor, and process until sticky dough form.
- Line a large plate with parchment paper.
- Ball the dough together, and mold into a large, flat circle (similar to pizza crust) on the parchment lined plate. Press firmly, it'll be about 1/4" think
- Place crust in freezer to set while you make the sauce.
- SAUCE >> Chill the can of full fat coconut milk in the fridge for at least 24 hours.Open the can and scoop the solid white coconut cream into the bowl, along with the other 2 ingredients. Using an electric hand mixer or a stand mixer with the whisk attachment, beat the cream until fluffy and smooth, ~2 minutes. (You'll have leftovers!)
- Top with your favorite fruit pieces.

Hi! In the crust, maybe try rolled oats? Or slivered almonds? For the sauce some variation of a cool whip/whipped cream would be great as-is or you can mix vanilla into it 🙂 Let me know how it comes out!
