Get excited! You are going to LOVE this. My avocado chocolate pudding recipe mixes the deliciousness of a decadent chocolately dessert with the healthiness of an avocado and some superfoods. It’s also loaded with protein and has a handful of veggies.

Sounds too good to be true, right?

Some of you may have heard of ‘avocado chocolate pudding’ before, but I’m sure there are at least a few of your scratching your heads wondering what avocado is doing in a pudding. The secret ingredient that makes it so healthy but also tasty is the use of avocados as the base for the pudding. Avocados have the perfect texture to form the base of a great pudding and their mild taste allows the other flavors to dominate the dish.

Being high in fat (healthy fats, the monounsaturated variety), the avocados make this Paleo dessert very filling and satisfying. They are also very nutritious and loaded with soluble fiber, vitamin E and potassium. 

You’ll also notice in the recipe a handful of spinach. I add a handful of spinach to pretty much everything I put in my blender. It’s loaded with nutrients that help alkalize the body, aid digestion, lower blood sugar, and fight wrinkles, plus it doesn’t really taste like anything. This way you’ll get all of those health benefits, and get to eat pudding too! It helps me justify when I eat this recipe for breakfast. If you don’t want to add spinach to yours, that’s totally ok 

The chocolatey taste in this recipe is from organic, raw cacao powder. If you haven’t heard of “cacao” before, you’re probably thinking I made a typo, switching the “a” and the “o” but cacao and cocoa are actually two different products. The difference between the two is that raw cacao is made by cold-pressing unroasted cocoa beans. Cocoa powder is raw cacao that has been roasted at a high temperature, reducing the enzyme content and lowering the overall nutritional value of the bean.

So given the choice, go with the raw, organic cacao. I also use it in my 3 ingredient chocolate bar and raw chocolate brownie bites! It’s high in anti-oxidants, magnesium, iron, calcium, zinc, manganese, reduces blood pressure, natural anti-depressant, reduces risk of stroke, energy booster, and MORE! Not to mention, being organic eliminates the risk of GMO’s and pesticide exposure. 

One more thing to note: in order to cut down on processed sugar in a traditional pudding recipe, I’ve replaced it with a banana (natural fruit sugars plus other health benefits/nutrients) and raw local honey (same reasons!). Enjoy!!

Avocado Chocolate Pudding Recipe

Ingredients

  • 2 large Medjool dates
  • 2 tablespoons water
  • 1/2 large avocado
  • 1 tablespoon honey or maple syrup
  • ~2 (slightly less) tablespoons cacao powder
  • 2 scoops Vital Proteins collagen peptides
  • Sprinkle of sea salt
  • Optional (recommended): 1-2 tablespoons your favorite nutbutter

Instructions

In a small dish or ramekin, add 2 Medjool dates (like these, pits removed) and 2 tablespoons water. Microwave 30 seconds and set aside.

Add the rest of the ingredients into the bowl of a large food processor (works best with large because of bigger motor), along with the dates & water from the small dish.

Process at least 1 minute. Then scrape down the sides with a spatula, then process a little longer. -Make sure you process it nice and long so it all breaks down and gets really creamy!
