Baking warm, delicious treats is a cozy activity when it’s freezing cold outside!
Zucchini bread is one of my favorite healthy treat recipes I’ve modified to be healthier (like nixing the white refined sugar and replacing it with coconut sugar – low in the glycemic index and full of vitamins, minerals, and amino acids and molasses – excellent source of copper, manganese, potassium, magnesium, vitamin B6 and more).
It’s super moist and flavorful, and free of gluten, dairy, and soy…and trust me, you won’t miss em! It makes the perfect snack or dessert, and tastes the best heated up a little bit.
Zucchini Bread

Gluten free, dairy free, soy free
Ingredients
- 1 cup zucchini (finely shredded, lightly packed)
- 1 1/2 cups gluten-free all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup coconut sugar
- 1 tablespoon molasses
- 2 eggs
- 1/2 cup unsweetened applesauce
- 3/4 tsp vanilla extract
- Optional: 1/4 cup raisins, 1/3 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees and grease sides of a 9x5" loaf pan with coconut oil or butter.
- Mix together dry ingredients, then add wet ingredients to it, then add the zucchini (and any optional ingredients)
- Pour mixture into the loaf pan.
- Bake in preheated oven for approximately 45 minutes or until toothpick comes out clean.
- Enjoy!
