I have a confession to make. I’m addicted to chocolate. Not in the sense most people say they are though, I eat it 2-3 times every single day! Now it’s important to note, there are two kinds of chocolate out there. The unhealthy kind, made with lots of ingredients and very little actual cocoa bean (which is super healthy for you, more on that later), and the healthy kind, made with minimal ingredients and packed with nutrients. Most chocolate you see in the candy aisle of stores contains dairy, soy, sugar, and lots of preservatives.
The chocolate I go for is the healthy kind, using 100% raw, organic cacao powder. If you haven’t heard of “cacao” before, you’re probably thinking I made a typo, switching the “a” and the “o” but cacao and cocoa are actually two different products. The difference between the two is that raw cacao is made by cold-pressing unroasted cocoa beans. Cocoa powder is raw cacao that has been roasted at a high temperature, reducing the enzyme content and lowering the overall nutritional value of the bean. So given the choice, go with the raw, organic cacao. It’s high in anti-oxidants, magnesium, iron, calcium, zinc, manganese, protects nerve cells from damage, reduces blood pressure, natural anti-depressant, reduces risk of stroke, energy booster, and MORE! Not to mention, being organic eliminates the risk of GMO’s and pesticide exposure.
This recipe for 3 ingredient chocolate bars is one of my favorite ways to enjoy cacao powder. I hope you guys like it! It’s so easy, and delicious. Full recipe below.
First, start with your 3 ingredients: organic unrefined coconut oil (yes I buy it by the gallon!), organic raw cacao powder, and organic raw honey (local if possible!). You can use a BPA-free silicone chocolate mold or you can pour it into a parchment lined small dish.
Next, mix all of the ingredients together in a bowl (using a whisk actually works better than the fork I used in this picture!). Make sure the coconut oil and the honey are both in a liquid-y state. Mix well! Make sure there are no clumps.
Then as you probably guessed, pour the delicious chocolate mixture into your mold (or parchment lined small bowl). Very carefully, transfer the mold/bowl into the freezer. I found it was easiest to put it on a plate first then walk over to the freezer. Let it sit in there for around an hour until it becomes completely firm.
It should pop right out of the mold! Then there you go, a healthy and delicious chocolate bar. They keep best when stored in the freezer. Enjoy!
- 1/4 cup organic, raw cacao powder
- 1/4 cup organic, unrefined coconut oil
- 2 - 3 tablespoons organic, raw honey
- Make sure the coconut oil and honey are in a liquidy state
- Combine all ingredients in a bowl. Mix really well with a whisk so there are no clumps.
- Pour mixture into a silicone chocolate mold or a parchment lined small bowl.
- Place in the freezer for close to an hour, until firm all the way through.
- Store in the freezer (if there are leftovers!)
