This recipe of the best of both the apple pie and the apple crisp worlds!

I came up with it when my husband and I were debating what to do with all of the apples we had just brought home from apple picking. I LOVE pie, but he’s not really into the crust, so we compromised and this beauty was created.

I wanted to keep it pretty simple and not use a lot of ingredients, but also make it taste fantastic – of course! I used minimal sugar and swapped out traditional flour for almond meal in the crust to give it some protein and healthy fats.

Apple Pie Remix Recipe

Ingredients

  • Crust:
  • 2 cups almond flour
  • 1/4 tsp sea salt
  • 2 tbsp coconut oil
  • 1 egg (look for 'pasture-raised')
  • .
  • Filling:
  • 7-8 apples, peeled and diced small (1/4" pieces)
  • 1/3 cup pure maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp arrowroot flour (or tapioca)
  • 1 tbsp lemon juice
  • Pinch sea salt
  • .
  • Crumble:
  • 1/3 cup almond flour
  • 1/3 cup coconut sugar
  • 1/3 cup oats, plus 2 tbsp
  • 1/2 tsp cinnamon
  • 4 tbsp grass-fed butter

Instructions

    For the crust: Place flour and salt in food processor and pulse briefly (or bowl and use a mixer). Add coconut oil and egg and pulse just until mixture forms a ball. Don’t over-process! Press dough with fingers into a 9-inch pie dish. Bake at 350° for about 10-15 minutes until lightly browned.

    For the filling: While the crust is in the oven, add all filling ingredients *except for the tapioca flour* into a large saucepan over medium heat. Cover the pan, and stir occasionally. Once the apples are soft but still have some crunch, stir in the arrowroot flour. Once the liquid from the apples has thickened and the flour has dissolved, remove from heat. Transfer the cooked apples to the pie crust once it's out of the oven.

    For the crumble: Pulse all of the ingredients in a food processor, except for the additional 2 tablespoons oats, until butter has formed little peas. Add in the two tablespoons whole oats, then sprinkle mixture over the top of your pie. Bake at 350°F for about 20 minutes or until the crust is golden brown. Let sit for about 15 minutes before cutting and serving.
