This delicious, easy, and quick cookie recipe is the perfect thing to bring some holiday cheer to family, friends, or even co-workers at a cookie swap! I love snacking on them either for dessert.
Unlike most cookie recipes, this one requires no baking, you’ll be getting nutrients like antioxidants, magnesium, and fiber, there are no grains (Paleo diet approved), and there’s no fancy equipment needed.
Raw Mint Chocolate Cookies

Gluten-free, dairy free, soy free, Paleo, vegetarian, vegan
Ingredients
- 1/4 cup coconut flour
- 1/4 cup raw cacao powder
- 2 tablespoons liquid sweetener (maple syrup, honey, coconut agave, or a few drops of stevia)
- 2 tablespoons coconut oil
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
Instructions
- Combine all of the ingredients in a mixing bowl, and stir to combine well. On a parchment-lined surface*, either roll the dough out with a rolling pin and use cookie cutters (or the top of a shot glass) to make shapes, or scoop the dough right out of the mixing bowl with a 1-teaspoon measure and press with your fingers flat on the lined surface.
- Place in the fridge for an hour, until firm. Once they are firm, you can keep them at room temperature.
Notes
- *The key is using parchment paper or they will stick like glue when firming in the fridge!

I ended up buying three packs of thin mints from my coworker (he was helping his daughter so I guess it was for a good cause!) so I feel a bit guilty!
